In Il Borro’s restaurants, the farm-to-table philosophy inspires every aspect of the cuisine, respecting the land and Tuscan traditions. We use seasonal raw materials from the Estate or selected local producers, ensuring sustainability and transparency along the supply chain.
Our organic products, such as wine, extra virgin olive oil and ancient grains, are central to our gastronomic offerings, which are enriched by fresh, wholesome ingredients, such as vegetables from our organic garden and pecorino cheese made with milk from our sheep. Reducing waste and emphasizing Tuscan excellence reflect our commitment to an authentic and sustainable experience, complemented by a wine list that celebrates the region’s terroir.
Within the Borro, catering plays a central role and is designed to meet the tastes not only of hotel guests, but also of external customers.
